Strawberry oat pancakes
Ingredients
| Soy milk |
200 g |
| Lemon juice |
15 g |
| Oil |
5 g |
| Stevia |
5 g |
| Oat flour |
125 g |
| Baking powder |
15 g |
| Salt |
1/2 g |
| Frozen strawberries |

Steps
- In a bowl, whisk milk, oil, lemon juice and stevia.
- In another bowl, whisk flour, baking powder and salt.
- Pour the wet mix into the dry mix and whisk the batter well.
- Let thaw, dice and add in the frozen strawberries.
- Set a pan on the stove on medium heat.
- Wait 5 mins, brush some oil and ladle some batter on it.
- When you see some bubbles, flip and wait until cooked on both sides.
- Repeat with the remaining batter, it should yield 6-8 pancakes.
- Serve with vegan butter and maple syrup.
